  • ½ teaspoon red pepper flakes (optional for heat)
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh rosemary, minced (plus more for garnish)
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 cup baby spinach or kale
  • 1 tablespoon aged balsamic vinegar

The Steps to Follow |

Sauté the Aromatics: In a large pot, heat 2 tablespoons of extra virgin olive oil over medium heat. Add diced onions and carrots, cooking for 4-5 minutes until softened. Stir in garlic, salt, black pepper, red pepper flakes, oregano, and rosemary, cooking for another minute until fragrant.

Add Greens & Balsamic: Stir in baby spinach or kale and let it wilt. Add aged balsamic vinegar for a touch of acidity that enhances the flavors.
