12 red new potatoes
6 slices of bacon, cooked and crumbled
3 tablespoons Foodie Tasting Room Roasted Garlic EVOO
1 1/2 cups sour cream
1 package (8 oz) cream cheese, softened
1/2 cup shredded cheddar cheese
1/2 cup pepper jack cheese
1/2 cup gouda cheese
1/2 cup chopped green onions

Preheat your oven to 375°F (190°C). Grease a inch baking dish.
Bake potatoes until they are fork-tender, about 18-22 minutes.
In a mixing bowl, combine the sour cream and softened cream cheese until smooth.
Fold in the shredded cheeses, crumbled bacon, and chopped green onions into the sour cream and cream cheese mixture. Season with salt and pepper.
Smash the potatoes. Fold the smashed potatoes and EVOO into the mixture until well combined. Transfer the mixture to the prepared baking dish, spreading it out evenly.
Bake in the preheated oven for 15-25 minutes, or until the casserole is heated through and the top is golden brown.
Garnish with additional chopped green onions and cheese. Serve hot and enjoy your delicious loaded potato casserole!
