Roasted Easter Lamb with Olive Oil, Garlic, and Mediterranean Herbs

  • 6 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon ground cumin (adds warmth and depth)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 cup cherry tomatoes, halved
  • 1 cup kalamata olives, pitted
  • ½ cup white wine or vegetable broth

The steps to follow |

  1. Prepare the marinade – In a small bowl, combine olive oil, garlic, rosemary, thyme, oregano, salt, pepper, cumin, lemon zest, and lemon juice to create a fragrant marinade.
  2. Marinate the lamb – Place the lamb in a large roasting pan. Rub the marinade all over, making sure to coat every part. Cover and let sit for at least 1 hour (or overnight in the refrigerator for a deeper infusion of flavor).
  3. Preheat the oven – Set your oven to 375°F. Let the lamb come to room temperature for about 30 minutes before roasting.
  4. Roast – Arrange cherry tomatoes and olives around the lamb in the pan. Pour white wine or broth over the top to keep the meat moist. Roast uncovered for about 1½ to 2 hours, basting occasionally, until the internal temperature reaches 130°F for medium-rare or 140°F for medium.
  5. Rest and serve – Remove from the oven and let the lamb rest for 15 minutes before slicing. Serve with roasted vegetables, crusty bread, or a light spring salad.
