Rice Dressing with Lady Cream Peas

Groceries |

1 package Richard’s Rice Dressing Mix

1 pound ground

1/2 pound chicken livers, chopped

1 can (15 oz) Lady Cream Peas

2 tablespoons Foodie Tasting Room Fresh Garlic EVOO

1 small onion, finely chopped

1 red bell pepper, finely chopped

2 cloves garlic, minced

3 celery stalks, finely chopped

1 cup chicken stock

2 green onions, chopped

fresh parsley, chopped

The steps to follow |

Follow the package instructions for the Richard’s Rice Dressing Mix. Typically, this involves bringing water to a boil, adding the mix, and then simmering until the rice is cooked and the flavors have melded together. Set aside when done.

In a large skillet or Dutch oven, heat EVOO over medium heat.

Add the ground beef and chicken livers. Cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.

Add the chopped onion, bell pepper, garlic, and celery. Cook until the vegetables are softened, about 5 minutes.

Stir in the drained peas and cook for another 3-4 minutes to heat through.

Add the cooked Richard’s Rice Dressing Mix to the meat and vegetable mixture. Stir well to combine and allow the flavors to meld for a few minutes.

Garnish with chopped green onions and parsley before serving.
