Popcorn Balls with Steen's Syrup

10 cups popped popcorn (about 1/2 cup unpopped kernels)

1 cup Steen's Pure Cane Syrup

1/2 cup unsalted butter

1/2 cup packed brown sugar

1/4 cup light corn syrup

1/4 teaspoon salt

1/2 teaspoon vanilla extract

Pop your popcorn using an air popper, stovetop, or microwave. Make sure to remove any unpopped kernels. Place the popped popcorn in a large mixing bowl and set aside.

Prepare the Syrup Mixture:


In a medium saucepan, combine Steen’s Pure Cane Syrup, butter, brown sugar, and salt. If using, add the light corn syrup.

Cook over medium heat, stirring occasionally, until the mixture comes to a boil. Once boiling, continue to cook without stirring for about 4-5 minutes, or until the mixture reaches the hard-ball stage (250°F - 266°F) on a candy thermometer.


Remove the saucepan from heat and stir in the vanilla extract, if using. This adds an extra layer of flavor to the syrup mixture.


Immediately pour the hot syrup mixture over the popped popcorn. Use a spatula or large spoon to gently stir and coat the popcorn with the syrup. Be cautious as the mixture will be very hot.


Allow the mixture to cool slightly until it's comfortable to handle. Grease your hands with butter or cooking spray to prevent sticking.

Take small handfuls of the popcorn mixture and shape them into balls, about 2-3 inches in diameter. Place the formed popcorn balls on a parchment-lined baking sheet or plate.


Let the popcorn balls cool completely and harden. This usually takes about 30 minutes to an hour.


Once set, the popcorn balls are ready to enjoy.
