Homemade Cathead Buttermilk Biscuits Recipe

Groceries |

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup cold unsalted butter
  • 1 cup buttermilk

The steps to follow |

  1. Preheat the Oven:

    • Preheat your oven to 450°F . This high temperature helps achieve a nice rise and golden-brown crust.
  2. Prepare the Dry Ingredients:

    • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. This ensures the leavening agents and salt are evenly distributed throughout the flour.
  3. Cut in the Butter:

    • Cut the cold butter into small cubes and add it to the flour mixture. Using a pastry cutter, fork, or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs. You should see small pea-sized pieces of butter throughout the mixture. This step is crucial for achieving the flaky texture.
  4. Add the Buttermilk:

    • Make a well in the center of the dry ingredients and pour in the buttermilk. Stir gently with a wooden spoon or spatula until just combined. The dough will be slightly sticky and shaggy. Avoid overmixing, as this can lead to dense biscuits.
  5. Shape the Biscuits:

    • Turn the dough out onto a floured surface. Gently pat it into a rectangle about 1-inch thick. Fold the dough in half, then pat it out again into a rectangle. This folding process helps to create layers in the biscuits.
    • Using a floured biscuit cutter or a glass (about 2-3 inches in diameter), cut out biscuits from the dough. Press straight down without twisting to ensure a good rise. Gather any scraps, gently press them together, and cut out additional biscuits.
  6. Arrange and Bake:

    • Place the biscuits on a baking sheet lined with parchment paper or a lightly greased baking pan. Arrange them close together for soft sides, or spaced apart for a crisper edge.
    • Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and the biscuits have risen beautifully.
  7. Cool and Serve:

    • Remove the biscuits from the oven and let them cool slightly on a wire rack. Serve warm with butter, honey, or your favorite jam.
