Bacon Jam Grilled Cheese Sandwich

8 slices of sourdough bread 

butter

8 thick slices mild cheddar cheese

The steps to follow |

Lay out the slices of bread. Butter one side of each slice.

On the non-buttered side of 4 bread slices, spread a generous layer of bacon jam.

Place 2 slices of cheese on each bacon jam-covered bread slice. Add a layer of sliced tomatoes and arugula on top of the cheese.

Place the remaining 4 bread slices on top of each sandwich, buttered side facing up.

Heat a large skillet over medium heat. Place the assembled sandwiches, buttered side down, onto the skillet. Cook for 3-4 minutes, or until the bottom is golden brown and the cheese starts to melt.

Carefully flip each sandwich with a spatula. Continue cooking for another 3-4 minutes, or until the second side is golden brown and the cheese is completely melted.

Remove the grilled cheese sandwiches from the skillet and let them cool for a minute or two. Cut them in half if desired, and serve hot.
